{Weekend Recap} Food, Fitness, and Family

Hello! Hello! Happy Monday to you all! :)  As I have said before, I am one of those crazy people who does not hate Mondays.  Sorry.  Just don’t (and won’t).  You should really try it; it works wonders for your mood and outlook!


{DISCLAIMER: I wish I had the time to expand on so much from this weekend, but I am crunched for time. Luckily I photograph and instagram so much that I can speak through pictures!} Enjoy!

This past weekend was a BIG one for me!  Why?  I moved!  Into my first apartment.  I have been talking about it for weeks if you follow me via social media outlets (Twitter, Facebook).  I am so excited!!!  And the best part about this weekend is that my mom came into to town to help me and enjoy some GIRL TIME! Woot woot!


I am a contest/freebies/couponing addict.  I know.  I love giveaways.  This is my loot that I had sent back home during the past month.  It was like Christmas up in here getting to open all of this up.  I look forward to product reviews and letting you all in some good finds!

On Friday night, we decided to go out to eat and INDULGE.  So what did we go for?! MEXICAN of course.  You know the chips you get before the meal?  I really should just tell them not to bring them. SUCH. A. WEAKNESS.  I ordered vegetable fajitas.  It was yummy!  But you know what?  It was a lot heavier than I am used to eating, and I dealt with the repercussions (feeling “fat” and bloated all weekend.. NO FUN so just eat clean)!!! Regardless, it was delicious. :)

Saturday Busy Day

Saturday morning, my mom and I woke up bright and early and ventured out to the local Farmer’s Market! It was fabulous.  We got so much–fruit, veggies, AND all-fruit spreads and cinnamon honey.  YUMMY IN MY TUMMY!

We spent the day running errands and buying things for my apartment.  I have to make this place all homey, right?!  Basically we just went to town on the kitchen.  Is anybody really surprised? I have turned into such a FOODIE.  And. I. Don’t. Care. :)

Yay! This was my first meal in my new apartment! On Saturday night I cut up a bunch of veggies from the Farmer’s Market and combined it with tomatoes straight from my mom’s garden.  Also, I whipped up smoothies.  They didn’t make very much.  As you can see.

Sunday Funday

In honor of Nike’s #FindGreatness movement, I made sure I got up this morning for my run! I busted out 7 miles around campus and through a local park.  My legs were still BURNING from my butt workout a few days ago, but it felt great to finally get back out on the open road.  Allergies are still acting up, but improving.

BREAKFAST! Recently I received a few boxes of cereal from Attune Foods. And I finally had the chance to try it out this morning.  I tried the Uncle Sam’s Toasted Whole Wheat Berry Flakes & Flaxseed  The best part about this?  The ingredient list. It’s simple. It literally has exactly what it says and nothing extra.  That’s what I like to see.  As you can see from the bowl, it has lots of flax seed in it.  Also, notice the box.  10 g of FIBER and 7 g of PROTEIN. This is for 3/4 cup.  It comes out to 190 calories but these are health-filled and nutrient-packed calories.  And the cereal was delicious! I used 3/4 cup of cereal with 1/2 cup Almond Milk.  I added 1/2 cup blueberries, 3 large strawberries, and a 1/2 peach on top!  On the side?  BLACK COFFEE.  It was so VERY YUMMY and perfect for post-workout!  And do you like the mug?! ;) That was a gift from momma.  I think it’s fitting.  I’ll admit it.

We ran errands ALL DAY and my grandma joined us! It was a great time! I found a new store that carries all my “crazy person healthy food” at a good price so I did the happy dance in the aisles and meandered around with a giddy smile for what felt like hours.  It happened. 

For lunch, we went to Jason’s Deli. I love this place. Their salad bar is FULL of anything and everything a girl could ask for–veggies and dessert. :)

And for dessert?  I used a dollop of chocolate chip mousse (just a dollop) and topped it with their two nut & granola mixes.  All of this is on the salad bar!

Fast-forward to dinner. It was a GINORMOUS sweet potato.

As it is probably apparent, I basically eat as though I am vegetarian.  But I swear, I am not.  What a weekend. So much food.  We ran a lot of errands, but my apartment has made very little progress.  Oh, it shall be a BUSY week. But at least I have a kitchen to cook in, a God that is looking out for me, and a mom to help along the way. :)

      YES! I try to just avoid Mexican food, because I know how the chips end up… in my belly.

    LOVE the food. It all looks so amazing. How exciting for you to be moving into your apartment.. and the goodies that you got in the mail- SO FUN! I see you go to Texas Tech. Love that. My sister and I are both from Texas!

    You are such a better mover than I am. I still have some unpacking to do. Not to mention, I haven’t had lunch or dinner in my apartment yet.
    AGH. I gotta be more like you.
